Buckwheat Chocolate Chip Cookies
When a cookie craving strikes.
These buckwheat chocolate chip cookies are made with simple ingredients, refined sugar-free, gluten-free and dairy-free (and they taste good).

Ingredients:
(10-12 cookies)
1 cup light colored buckwheat flour (ground buckwheat groats)
1/2 cup coconut sugar
1/3 cup melted coconut oil
2 tbsp water
1 tsp vanilla extract
1/2 tsp fine sea salt
1/2 tsp baking soda
1 tsp apple cider vinegar
1/2 cup dark chocolate chips
Instructions:
Preheat the oven to 350 F and line a baking sheet with parchment paper.
In a large bowl, mix together to buckwheat flour, coconut sugar, coconut oil, water, vanilla, salt, and baking soda. Then add in the vinegar.
Fold in the chocolate chips, then use a spoon to scoop the dough into mounds spaced evenly apart on the baking sheet.
Flatten each cookie with your hands, as they will only spread slightly in the oven. Sprinkle each cookie with sea salt if desired.
Bake until the edges are firm, about 10 minutes.
Remove from the oven and let cool for at least 10 minutes before serving.
