Spot Prawn Avocado Salad
Since it’s spot prawn season, I put together a spot prawn avocado salad using fresh and simple ingredients.

Ingredients:

1 lb fresh spot prawn tails
⅓ cup mayonnaise
1 tbsp Ugly ponzu sauce
4-6 baby cucumbers, thinly sliced
6 radishes, thinly sliced
1 head of frisée
1 medium avocado, thinly sliced
Black and white sesame seeds, for sprinkling on top
Instructions:
Thoroughly rinse spot prawns under cold water.
Bring a large pot of water to a boil then add spot prawns. Cook for about 45 seconds to a minute, they’re done when they float to the surface.
Transfer to a bowl and cover with ice then place in the fridge to cool.
Once the spot prawns have cooled, peel and devein.
Whisk together the mayonnaise and Ugly ponzu sauce to make a dressing.
Combine frisee, radishes and cucumber to a bowl. Drizzle with dressing and toss to coat.
Divide salad among plates, top with avocado slices and spot prawns. Drizzle with a little more dressing, top with sesame seeds and enjoy!
